Welcome, welcome guys to the first edition of “Foodie Fridays”, today we will be making cookies. Who doesn’t love a cookie? Usually, when I go to my local coffee shop here in my country, I usually get a cookie similar to this, so I decided to recreate it. Y’all when I tell you working out measurements to attempt this was a little hectic, eventually I got it. Everything balanced out well, anyway let’s get to the recipe.
Oatmeal, Chocolate Chip And Coconut Cookie
Makes 15 cookies
Ingredients:
🍪 ¼ cup unsalted butter (room temperature)
🍪 1 egg
🍪 ½ tsp vanilla extract
🍪 ½ cup all purpose flour
🍪 ¼ tsp baking powder
🍪 ¼ tsp baking soda
🍪 1¼ old fashioned oats
🍪 ¼ cup brown sugar
🍪 ¼ cup granulated sugar
🍪 ¾ cup shredded coconut
🍪 ½ semi-sweet chocolate chip
🍪 Parchment paper
Process:
🍪 Using a mixer, get a large bowl and mix together brown sugar, granulated sugar and butter together. Mix together for about a minute, then add egg and vanilla extract, mixing until fluffy and smooth.
🍪 Preheat oven to 350° F.
🍪 In another bowl add flour, baking soda, baking powder and oats mixing together with a fork.
🍪 Using the mixer, slowly add oats-flour mixture to butter-sugar mixture, combining together nicely.
🍪 Add shredded coconut and chocolate chips to mixture, combining using a spoon or spatula.
🍪 Line baking pan with parchment paper, scoop out dough and bake.
🍪 Bake 9-12 minutes
